Red Rossa

Family is important to me and I am lucky enough to live close to all of my family so that I get to see them often. Every Sunday is pretty much family day for Jon's family but for my family we have to be a little more planned out.

Last Wednesday was one of those planned out family nights and we decided to try the restaurant that my cousin is the sous chief for. The restaurant is called Red Rossa and it is located right across from the Mall of America. The building is all newly remolded and it looks great. The atmosphere of the restaurant has a relaxed elegnant feel, with high ceilings, wooden beams, unique chandelliers and brick walls.

It's attached to the Best Western which helps out the restaurant a lot because they get to cater banquets and meetings. Which I'm sure they would get the business without the hotel being right there because their food is AWESOME. (Not only is the food that we got at the restuarant great, but my cousin is a great cheif and I've gotten to enjoy plenty of his food which has all turned out awesome)

To start we ordered bruschetta for everyone. Now Jon and I get bruschetta at every resturant we go to because we both love it so much - so basically I know what I'm talking about when it comes to which resturant has great bruschetta. I'm going to be honest with you... I still think Biaggi's bruschetta is the best and Jon's favorite is Chianti Grill but I would have to say that Red Rossa comes in third for the best tomato bruschetta I've had so far. But you shouldn't just listen to me... instead go taste it for yourself.


For the main course, I ordered The Italian Pizza. This fire roasted pizza came out perfect. It didn't taste burnt but had that great flavor that good fire roasted pizzas have. It was also loaded with olives, sausage, onions and cheese and filled me up quickly.


Overall I had a very pleasent time at Red Rossa and I highly recommend trying it out.

Jon's Favorite Potatoes

Whether it's fried, hashed, mashed or baked, I think we each have a different way we like to eat our potatoes. I have finally found Jon's favorite way he likes his potatoes and I thought I would share it with you.

I start off with a handful of red potatoes. Wash them and diced them. I like to make mine into bite size pieces but you can really do whatever you'd like.


PS isn't this the smallest potato you've ever seen?


Boil the potatoes for about 20min to soften them up. Then mix them with a little bit of Olive Oil and spices.
Today I did Italian type spices so I added: Thyme, Oregano, Parsley, Basil, Rosemary, Garlic Power, Red Pepper flakes, salt and pepper. I add about a dash of each - more or less depending on the amount of potatoes.


Mix the spices with the potatoes then spread the potatoes out on a greased cookie sheet and bake at 400 until potatoes turn somewhat crispy (usually about 30min). Enjoy!

My Front Porch

When we bought our house the porch needed to be repainted. We just now finally got around to it.

Saturday Jon borrowed my brother's power washer and he power washed the porch to get it ready for a new coat.


We let it dry for at least 24 hours. (cause that's what they told us to do.) Then Jon sanded the porch and I painted it. Jon picked out this great dark red color and I think it makes the porch look really nice.


I just decided to use a brush on everything because our porch isn't very big. It took me about 40 minutes to do the whole thing.

Little Black Dresses

Holly is getting married!

We are so excited for her! I am also so excited that I get to be apart of the wedding party. Sunday afternoon we went out shopping for bridesmaid dresses. It was a lot of fun.

Holly was very flexible when it came to us finding dresses. Since the wedding is in October we had to buy them off the rack. The trick was to find a dress that had all of our sizes. We found a short light-weight dress that works and we all feel comfortable in, so we went with that. When I showed Jon, he said I looked like some kind of Egyptian warrior but I'm going to ignore that comment and I think it's going to look nice.


We also found shoes to go with the dress too! These cute little heels match the dress by having a little bit of bling with the rest of the shoe being black.

Chrissy's Birthday Fun Part 2

I, of all people, know that it's way more fun to have more than one birthday celebration. Saturday Night, I got the chance to go out with Chrissy again for her birthday.

This time we headed over to Uptown and started the evening off in the Wild West at Cowboy Slims. This fun relaxed atmosphere got everyone ready for the night. Their food portions are huge and they play a lot of country music, just my type of place. And purely by chance, I sat a spot at a table where this was carved into the table.

I took my leave once we were done at Cowboy Slims but the rest of the crew headed to Stella's Fish Cafe for drinks and to find Chrissy a guy. (Chrissy, by the way, is a smart beautiful single woman and wants a man, so if you are a smart single man you should call her.)

Layoff Beard

My wonderful husband works for the State. While the State was closed and he was laid off he decided not to shave his beard until he had to go back to work. We figured he didn't shave for about 16 days, which is the longest he's ever gone without shaving.

Chrissy's Birthday Fun

Wednesday was Chrissy's birthday and I was lucky enough to go out and celebrate with her.


We started the night off with dinner at Cuzzy's in Downtown Minneapolis. Good prices and good food made this place a fun relaxing place to have dinner. Inside looks like a typical bar with low lighting but the cool part about the building is that the walls are covered with money. Seriously. I didn't find out why but it looks cool.


After dinner, we headed over to Acme Comedy Club because in the month of your birthday you and five of your friends get to go for free. So the club was free for us to get in, which means we were more willing to buy fancy drinks.


Mine was called a Bomb Pop and actually tasted kinda like one. Yum.

Jump

She slid into the cold water to avoid slipping and hurting herself on the rocks. Goose bumps appeared over her entire body causing her to shiver and she wished she had not taken that first step. But she was here and he was calling her forward.
Floating horizontal on the surface of the water, she glided forward by grabbing onto the rocks beneath and pulling herself until the water was deep enough to kick and swim in.
She chased him; her fingers just lightly brushing up against his heels as they swam fast to the sunken building. He reached the building first and climbed into the doorway. Turning around he offered her his hand and helped her in. He is always a gentleman.
 As she stood, she was surprised to find that the floor was not slippery like the rocks on the shoreline. Sure of their footing, the pair made their way through the doorways into each new room. Ducking under spider webs and avoiding nasty looking bugs that had made their home that abandoned place, they splashed their way through the hollowed out rooms.
Daylight shone through the windows and the small holes in ceilings illuminating the watery floor and showing areas where there may not be a floor at all. She tried hard to not think about what could be lurking in the shadows in the water.
 A wooden ladder, put there by some other explorer, made an easy access to the second floor. He let her go first. With him holding onto the ladder, she felt safe as she made her way up through the small opening in the ceiling.
Rocky concrete that had been worn away over the years, left only the small rocks on the surface.  All around her the concrete threatened to harm her if she were to slip and fall. Pain ran up her arms as she pushed her palms down on the surface to hoist herself up through the opening. She checked; no cuts on her palms.
She helped him up. There was no ceiling in this room, just the cloudy sky looking down on them. The outer walls were slanted at an angle.  Windows were cut through the inner walls to reveal a room on each side. She looked around, rocky concrete covered every surface of this place.
Her heart swelled with fear as she thought about what she was about to do.
She approached the first wall; examined it closely only to find that it contained no foot holdings. She tried to climb, but jumped back down for fear of falling and scrapping her skin. Not wanting to give up, but not wanting to climb that wall, she crawled through the window into the next room. Same layout as the first, except this time there was a metal square sticking out of the slanted wall.
She looked out the next window. This one over looked the lake. She could see others approaching. She went back to her task of trying to climb the wall.
She put her toe in a small crack in the wall. She pushed up and grabbed at the metal square with her left hand. She found another crack for her other foot and pulled herself up further; this time using the metal square as a foothold. She grabbed onto the top ledge of the wall and pulled herself up further. Surprised at her strength, she pulled herself up until she was sitting on top of the wall, looking down at the concrete room.
The warm breeze hit her back and she look behind her. She saw people strolling along the lake shore. Some pointed at her, others stopped to see what was going on. Trying to ignore their curious eyes, she turned back to find him crawling through the window. He was looking for a way up the wall. She sat there, no way to help him up without falling onto the hard concrete.
She cheered him on.
The others were in the room now too. One of which had bloody knees. She had feared getting cut and felt sorry for the other who did. They were less careful; not afraid to be scraped and they ran up the walls and made it to the top. He made it too and sat next to her as the others crawled along the tops of the walls to the outer edge. They stood up and jump! She clapped at their braveness, knowing that she would have to be next.
They sat on the ledge looking down at the concrete room and out at the people walking by. They caught their breath. He was ready to stand and she suppressed her fear and kept telling herself it was almost over. Taking a deep breath she lifted up her legs and stood up on the ledge, then quickly knelt back down. She was afraid. But she was doing this because he wanted her to. So she stood back up.
They stood there together on the outer ledge. They talked about jumping. Her heart started to race uncontrollably. She knelt back down. She looked up. There was a crowd gathered. She could feel their eyes on her and that made her turn red and her heart race even more. She closed her eyes, took a deep breath and stood back up.
He jumped first.
Now it was just her. She remembered how cold the water was. She saw all the people watching her and giving her that silent pressure for her to jump. She saw him floating in the water, happy that he had jumped and made it. She moved up a step. Took another deep breath as her heart threatened to beat uncontrollably again. She was determined to not let it happen again.
She jumped.
The water came rushing up and she was under before she knew it. She kicked hard to make her way back to the surface. She saw him, smiling from ear to ear. She swam over to him and kissed him hard.


This is my account of what Jon and I did for our anniversary this year. I thought I would try a different way of explaining what we did. Hope you liked it.

Reminiscing

July 18th, 2009 is the day we got married. And last weekend was our 2nd Wedding Anniversary. So because it was our anniversary, I got to thinking back on the day we got married. We also went through all our wedding photos and I thought I would share some of my favorites with you!

We had an outdoor wedding in the backyard of the house I grew up in. Everyone else was worried about the weather because it was outside in July. I didn't even check the weather the whole week leading up to our wedding... it's not something I can control so why worry about it. The day turned out to be a perfect 75 degrees and overcast (so no one is squinting into the sun in any of our pictures).



It was really important to me to have my brother in the wedding, in fact I wanted all of my family. My mom had pounded in my head that siblings are stuck with each other for the rest of our lives so we might as well learn to get along. So I figured that they are the ones who are going to be around me in 30 years so why not have them in my wedding. And I love Jon's family so it worked out perfect to have all of our siblings.


The Dress:
Bought at the Wedding Shoppe on Grand. Basically I put it on and I knew that it was the perfect dress. Turns out it's the style Jon likes too!


The Jewelery: A necklace I inherited from my mom and earrings Jon gave me. If I'm going to wear jewelry, I like it to have a history (so-and-so gave this to me, this was from my husband, etc)


Flowers: Prestigious Petals
She did an awesome job on my flowers. I basically just told her the colors I wanted and she did the rest. They turned out better than I had imagined!

They also did an awesome job! I highly recommend them, they are super easy to work with and creative when it comes to finding that perfect picture. And if you look at their website, my toes and Laura's dog are in one of the pictures that comes up!


Reception Hall: Metro State University St Paul Campus
I wanted my Ceremony and Reception in the same location but didn't want to bother renting tables/etc to have it at the house. Metro State is located right behind my Dad's house so it was perfect. Plus they were a really good price!


The Cake: Buttercream
My part-time job during college was waiting on tables at weddings and if there was ever any left over cake we got to try it. So basically, I've eaten a lot of cake and Buttercream cakes are my favorite. We had 3 flavors for this cake. Lemon-Raspberry, Carrot Cake and White with a Mint Chocolate middle. And on my wedding day I had a piece of each, I have no shame in that.


Before Jon and I started dating, we were friends. One day we were walking with a few of our other friends and Jon tells us that when he gets married he would like to pull a prank during the ceremony were the rings get "lost". Once he was done with that story, I thought to myself "That would be awesome, I hope my future husband wants to do that in my wedding". Two years later he became my husband and I let him fulfil his dream of pulling a prank during the ceremony.

Now Jon's brother is very forgetful. So all day long my bridesmaids we asking him if he had the rings because they were pretty sure he was going to forget them during the ceremony. The ceremony comes around and the Pastor asks for the rings. Jon turned to Chris and Chris started to franticly search for the rings in his pockets. Chris turned to Travis and Travis put his hands up, backed away and said "don't look at me". Jake stepped out and said "I've got this". Pulled out a Cracker Jack box from his pocket, poured it out and at the bottom were the rings. He handed them over to the Pastor and the ceremony continued. Jon, Chris, Jake and I were the only ones who knew but we should have told the photographers cause this is the only picture we have of it and it's right after the whole thing is done.


Overall the day, for me, was relaxed. So that means either everything went perfect or my bridesmaids did a really good job of hiding things from me. But I honestly think everything just went perfect.

Sweet Gateaux

One of my really good friends is starting up a Cake Making business. She does an awesome job, and she's always been really good at baking cakes (I know this from personal experience). So for Jon and I's anniversary I asked her to make us a cake.

I think she did an awesome job with this Scrabble Themed Carrot Cake.

Grill

We finally got a grill! We are pretty excited about it and we think that you should be too cause now we want to invite everyone we know over for a BBQ. This grill was pretty much given to us by one of Jon's friend's parents, so it's older but it works great. For lunch today Jon's grilled up some bratwursts to test it out.

Harry Potter

Yes, I'm that big of a nerd...

I went and saw the final Harry Potter movie last night at midnight. It was pretty great. The Mall of America was doing a Harry Potter movie marathon so I was able to see the previous movie before that and then I got priority seating for the next movie. We sat in the VIP theatre, which is 21+ and I've decided that's the way to see a movie. They have servers and stuff who will serve you food and drinks. The chairs are big and comfy and there are small tables between each seat (not good if you are on a date and want to cuddle but great if you are just there to eat junk food and watch a movie)

I highly recommend going to see this movie but I also say that you should read the books first. I feel that if you just see the movies there are so many small things that you will miss out on and things you don't understand. Not only that but it's good to read and everyone should read. :-)

Wine

For those of you who know Jon and I well, you will know that Jon doesn't drink any alcohol but I do. So far it hasn't been an issue. Jon doesn't mind that I enjoy a glass of wine once and awhile and I make sure he's ok with me drinking when I do. I'm a fan of wine and Jon has started a tradition where we go buy my supply of wine for the year at Surdyk's wine sale. (I think it's so he doesn't have to buy my wine all year and instead we just do it in one day)

The tradition started right before we got married and Jon, knowing that I like wine, went to Surdyk's because they were having a wine sale. He bought me a nice bottle for our wedding and a few big bottles for me to drink throughout the year. Last year he took me there to pick out my own wine for the year and we bought 24 bottles (5 of which I still have, and 4 I gave away). Not only do I like drinking it, but I find it really handy to have wine on hand so I can just grab a bottle and go to a dinner party, birthday, etc.

So this year, we bought a lot of wine. The nice part about going to Surdyk's is that we can pick out cool looking bottles of wine and still only pay 5 bucks for the bottle. We bought 29 bottles this year.


Some of them Jon picked out just because of the name of the wine.

"How to Match" Chart

When I started dating Jon, he didn't own a button up shirt (not even a polo), T-shirts and shorts is all he wore. Since then I have gotten him button up shirts/Polo's/etc and have been slowing teaching him how to look nice.

Well last February he got a new job where he has to dress up for work daily and occasionally wear a suit & tie. This job has greatly increased his clothing options. I want to be able to help him pick out what he should wear but I leave before he gets up so I can't help him. Instead I borrowed a great idea I learned from a friend, modified it to fit our needs and came up with Charts! I'm updating them today cause I bought Jon more cloths for his birthday and he admitted that he's avoided wearing them cause they are not on the charts yet.


I made two charts. The first chart matches pants with shirts. One row has all of the colors of Jon's pants. The other has most of his shirt colors. The second chart shows which ties go with which shirts. I just used colored pencils and tried to match the colors as best I could. As long as Jon can read it, then it's all good.

Chiang Mai Thai

Last week we mentioned to some friends that we went to Sawatdee and that Jon actually found something to eat there. One of those friends loves Thai food and suggested (since Jon will eat Thai food now) that we all go out for Thai food.

So last night we went out for Thai food.

The Restaurant: Chiang Mai Thai
Recognized by City Places as being a "Best of Thai Food Restaurant", this place offers a wide selection of fine wines and beverages in combination with flavorful Thai food. City Pages describes it as "Chiang Mai's odd combination of crowd-pleasing food and connoisseur-pleasing beverage has resulted in a hopping time for all." The Location: Uptown, Calhoun Square
Described as "an urban mall in the heart of Uptown", this place has a ton of fun stores and good restaurants in and around it. It's a nice to place hang out if you've got nothing else to do cause there is always something cool to check out. (I can spend hours in the Kitchen Window)

The Atmosphere: We sat outside so I can't give you an accurate account of the atmosphere in the restaurant. But sitting outside was fun. There's always an interesting crowd walking around Uptown so plenty of people watching.

The Food: We ended up getting their date night deal... which in my opinion really isn't that great of a deal. You get two appetizers, one entree and a bottle of wine. With Tip the total came out to $50. And we had to spilt an entree. For the appetizers we got Spring Rolls and Cream Cheese Wantons. The Spring Rolls had big chunks of chewy meat in them which made them hard to eat. The Wantons were very good and I wish we would've just gotten two orders of those. For the entree (since Jon is picky) we got Thai Fried Rice. Which was good but a little greasy and there wasn't anything else in it besides rice, eggs and tomatoes. So I wasn't impressed.

The Service: There was only one waiter serving the tables outside, which had to be at least 10 tables. So it was slow but we were busy enjoying each other's company so we didn't notice it that much.

Would I Recommend? This restaurant is only ok. Cool location, Some good food and lots of good drinks. So if you want drinks and appetizers, then yes I would recommend. If not, there are a ton of other great date night deals happening at other restaurants around the cities.

Grand Ole Creamery

Another expiring Groupon that we had to use this weekend was for the Grand Ole Creamery. The Groupon was good for one pizza and a pint of ice cream.

Apparently there are a lot of other people who needed to use their Groupon before it expired cause it was super busy and they even had a sign warning us.


We took our pizza home to eat. We also started up a favorite summer past-time where we eat dinner and play Scrabble on our front porch (we sound like an old married couple but we have fun)


We weren't even able to finish a game when it started pouring and Sweetie started to freak out. We took him to the basement where he gave us a presentation.


Not really, but that picture looks like he was. Instead we Netflicksed Alice in Wonderland that came out in 2010. It was actually pretty good. Way better than I thought it was going to be.

Transformers

At 12am this morning Jon had his first layoff, not permanently, just for a few days because the politicians are stupid and can't make up their minds.

Which means he gets today off! So in "celebration" of his random day off, we went to see the midnight showing of Transformers. It was a little late, considering I still had to work today, but we met some friends and it was fun.


I thought that this movie was way better than the second but not as good at the first. They did a better job in this movie with separating the Autobots and the Decepticons. During fight scenes in the second movie, I would get confused as to who was who cause most of the Decepticons had colors too. Plus in the second one Megatron seemed like a wuss which didn't fit into his character from the first movie. I could go on about this but I wont... So overall I recommend seeing the 3rd Transformers movie.
